I went out on a limb for Wendy for Christmas this year. Usually she’s very good at dropping hints. In past years she had occasionally been too subtle and I missed it - which is to say that she flat out told me and I forgot or thought I had a better idea. This year (after two or three years of me missing hints) I went out and got her some real cooking knives.
Now, Wendy had said that she wanted some real cooking knives, but neglected to specify what kind. As I wandered into the world of professional cutlery, I learned that there was quite a bit of variety and a wide array of differing opinions. After a lot of research and asking around, I finally settled on some Global Cutlery.
For all of you kitchen gurus out there, did I do OK or should I have gone with something different?
Looks to me like you did a-ok! I have a set of professional-grade Henckels knives--I like them quite a bit, but after using them for several years, I know I’d prefer a one-piece blade/handle like the kind you got. Anyway, good job!
Not Ginsu or the Miracle Blade?
You might find something different at that level, but you’d be hard pressed to find something better. But if Wendy decides she would like a salad spinner or Crock Pot instead, let me know and I’ll swing by to work out the trade.
Oh, and also, I hope for your sake that Lou Dobbs doesn’t find out you’re buying her Japanese knives. You could end up with a bunch of Paultards on your doorstep protesting. And that’d be sad, because they’d have to take time out from playing WoW to do that.

Other good brands are Chicago Cutlery (lower quality, but will last a long time if you take care of them), and of course Henckel’s knives. Wustof are about the best knives money can buy, but that’s if you want something truly professional grade.
